What You’ll Need – Ingredients & Prep
Ingredient List
Here are the ingredients you’ll need to make this Corn Salad recipe at home:
- 2 ears of Corn (cooked)
- 1 cup Black Beans (drained and rinsed)
- 1 pint Grape Tomatoes
- 1 small Red Onion
- 1 small Green Onion
- 1 Bell Pepper
- 1 Lime
- 1 tbsp White Wine Vinegar
- Fresh Cilantro
- 1/8 cup Extra Virgin Olive Oil
- 1/2 tsp Cumin
- 1 tbsp Garlic Powder
- Salt & Pepper (to taste)
Preparation
- Cook two ears of Corn and remove kernels from the cob
- Rinse and drain one cup of Black Beans
- Chop the Green Onion
- Dice one pint of Grape Tomatoes
- Dice the small Red Onion
- Grab a Large Mixing Bowl
- Grab a Small Mixing Bowl
Step-by-Step Directions for Making Corn Salad
1) Remove the kernels from two ears of cooked corn, and add to a large mixing bowl:
2) Add 1 cup of drained and rinsed Black Beans:
3) Add 1 small chopped Green Onion:
4) Add 1 diced Bell Pepper:
5) Add 1 pint of diced Grape Tomatoes:
6) Add 1 small diced Red Onion:
7) Mix well:
8) Grab a small mixing bowl and add 1/8 cup of Extra Virgin Olive Oil:
9) In the small mixing bowl, add 1 tbsp of White Wine Vinegar:
10) In the small mixing bowl, add the zest and juice of 1 Lime:
11) In the small mixing bowl, add 1/2 tsp of Cumin:
12) In the small mixing bowl, add 1 tsp of Garlic Powder, and Salt & Pepper (to taste):
13) Mix well, and then pour over the corn salad:
14) Top with Fresh Cilantro and mix again:
15) Serve and enjoy!
